From Scarborough Fair Pork Scallopini OR Pan-Seared Wild Salmon.  Tender slices of pork tenderloin pan-fried until golden brown and made with spinach and mozzarella served with Charred Brussel Sprouts and Garlic Mashed Potatoes.  OR, Pan-Seared Wild Salmon cooked until the skin is crispy and tender -- for the fish lovers in the family.  Both entrees served with the same sides.
